Wine and cheese are notoriously difficult to pair. The main reason is that the cheese coats the tongue and creates an oily layer that makes wine tasting difficult. You really need a strong partner if you want to cut through that layer to make contact with the taste buds. But if you have the right wine partner to compliment the cheese’s nutty flavour, you’ll be sure to wow guests. Try some of these unconventional partners as suggested by Cori McFadden, some may surprise you:

•    Sharp, mature cheddar with a Cabernet Sauvignon
•    Brie with Chardonnay
•    Buffalo mozzarella with Sauvignon Blanc
•    Gouda with Merlot.
